Cleaning system

For cleaning the cooked product, elimination of skin, bones and dark parts of the fish, for subsequent feeding of the product to the tuna canning machines.

The number of operators per system is established according to the required production and since it is a modular system, it can be expanded in accordance with needs.

It includes individual tables or one long table, with ergonomic chairs (rotating and height adjustable), footrests and waste collection at each work station.

Constructed with Cardan conveyors in closed circuits without return, producing an open, easy-to-clean system.

Fish Block Maker®

Designed to form fish blocks with subsequent bagging in a semi-automatic fashion with high production.

The fish is positioned on conveyors by a transfer system, designed and patented by Hermasa, it fills moulds that have been previously inserted in plastic bags, which then pass through vacuum, sealing and freezing.

It is versatile because it can be adapted to different block types.

Considerable labour reduction, increased production, accurate weights and better end-product quality, with practically no crumb production.

Generation of uniform blocks, which favours freezing, better packing, greater load capacity per container (depending on administrative limitations) and a more uniform defrosting process.

Tunivac steam tuna cooker

Cooker designed for automatic and programmed cooking of tuna species or similar fish, steam cooking with subsequent cooling by internal water spry heads and natural vacuum created by steam condensation.

Available in various diameters (1,500 mm or 2,000 mm) and different capacities to satisfy the demands of any production.

It is fitted with an automatic controller/programmer, with capacity for various cooking programmes, ambient temperature sensors and other temperature sensors in the fish spines.

Automatic sardine packing machine Flash-Pack®

A machine designed to perform the automatic de-heading, evisceration, washing and packing of sardines or similar species.

Available in various formats, attaining speeds of 200 cans per minute (according to fish size and format), with fourteen to sixteen operators.

When the fish is positioned in the buckets, designed and patented by Hermasa, the machine cuts off the fish head and tail using blades and carries out evisceration using suction from a vacuum pump, then washes the fish and employs a mechanical system to transfer the fish to the can, leaving it ready for cooking.

Automatic sardine CDA

Machine designed for cooking and drying, if required, the fish, already packed in cans.

The main feature of this machine is that the fish is cooked already packed in the upside down cans, thus allowing the grease and water to drain away during the cooking process and also fish drying, in order to produce an end product having better quality, presence and flavour.

In this cooker, the cans are automatically loaded in the grilles, which are then automatically rotated prior to entering the cooking area in order to position the cans upside down and they are automatically rotated again before unloading the grilles, all of which is performed by mechanical movements without any operator intervention.

It is available in several sizes according to the required production and adapted to the necessary format.

It may or may not include a drying area depending on the required type of product.

It is equipped with independent temperature selectors for the cooking and drying areas, with graphic recorders and temperature sensors.

Continuous oiler

Designed to add oil or sauces, by curtain or overflow, to the containers before they are closed.

Constructed with one or more dispensing units depending on required production and format.

The surplus oil or sauce is filtered prior to returning to the accumulation tank from which it is pumped back to the dispensing units.

When dispensing sauces, a stirrer is installed in the accumulation tank, which maintains the sauce mixture.

Can washing with oil recovery

Designed to wash cans with pressurised water from the machine tank. Its design enables the water-oil emulsion to be continually recovered. Subsequently, the oil can be recovered by separating it from the water with a centrifuge pump.

Washing is performed with hot pressurised water and with the can positioned laterally to achieve greater free washing surface.

It is designed in different sizes, depending on required production speed and format.

Designed to sterilise all types of conserved foods in sealed cans, with temperature and pressure control.

A heat exchanger may be fitted to convert the autoclave into a highly efficient unit from the energy point of view:

  • cooling water savings
  • savings on boiler water and fuel required to generate the steam

The heat exchanger makes it possible to reuse the cooling water in successive cycles (with a cooling tower or similar system) and the recovery of condensates that are returned to the boiler water tank.

It is heat insulated to prevent energy losses and has all the safety systems required for equipment of these specifications.

Designed to de-palletise cans from the empty can pallets and then feed them to the packing machines.

Can alignment line

This is a group of machines used for sequential unloading of the autoclave carriages when the cans arrive in bulk and subsequent alignment to feed the rest of the line.

It comprises:

  • Carriage turner (driven by the hydraulic unit and cylinder).
  • Buffer conveyor for can reception.
  • Alignment disc fitted with exit conveyor.

In addition, depending on the current can type, a can turner may be installed to position them all the right way up.

Salt doser

The salt doser is made of AISI-316 stainless steel and carries out the correct dosing of salt inside each can.

The salt is stored in a hopper with resistance heaters to keep the product dry so it will move out correctly, with temperature controlled by means of a thermostat. It also has a salt level control to avoid machine stoppages due to lack of product in the hopper.

Dosing is carried out as each can passes, thanks to a can detector system. This doser enables you to choose the amount of product deposited in each can.

Salt doser

Salt drier

Our salt drier is made of AISI-316 stainless steel and prepared for carrying out the grinding and drying of the salt that will subsequently be dosed in the cans with the salt doser.

This device ensures the product is dry and homogeneous for correct dosing, because the salt is sometimes damp, causing clumping that would impede correct dosing.  

Homogeneity is achieved by rotating the drum with the salt inside. This rotation favours the crumbling of the product, separating it into small particles, which are then placed under a current of hot air to dry them and leaves the product in optimum state for use.

HCT® defroster

This device is based on the principle of recirculation of air and low-pressure steam homogeneously.
The temperature of the air and steam mixture can be adjusted from 0 to 30 ºC maximum, depending on the product to be defrosted and the time required.

The equipment has a cooling system with 2 functions:

During the defrosting process, the refrigeration equipment controls the humidity inside the equipment, maintaining it at a constant 100%, so as to facilitate defrosting.
When the defrosting process is over, the product can be kept inside, operating as a maintenance chamber (5-10ºC). For this purpose, the steam injection is shut off and the cooling system continues operating indefinitely until it is decided to end the process.
