Tuna line/mackerel (with blanchers)

Specific equipment for tuna/mackerer processing

Tuna saw

Machine designed and manufactured for cutting fresh or frozen products, with or without bones. Available in different cutting widths (400 or 700 mm) and adjustable height using a guide. Maximum cutting height is 500 mm.

Constructed in AISI-304 stainless steel.

Washing and basket system

Designed for washing the fish pieces after passing the cutting saw and subsequent introduction of the fish pieces into the cooking baskets. Wash tunnel with spray heads using non-recoverable water. Conveyor belt fitted with lower liquid-collection tray.

Bleeding blancher

Designed to eliminate the blood from the fish body (fresh or frozen) prior to cooking, using bubbling water, in order to obtain cleaner, lighter-coloured meat.

Cooking blancher

Designed to cook fish (fresh, frozen or thawed) in water or brine.

Automatic water/brine temperature control with sensor and set-point temperature selector.

Basket washing

Machine designed to wash the cooking baskets.

It comprises several prewash, wash and rinsing areas, fitted with pressure pumps and automatic detergent dispenser.

Cleaning system

For cleaning the cooked product, elimination of skin, bones and dark parts of the fish, for subsequent feeding of the product to the tuna canning machines.

The number of operators per system is established according to the required production and since it is a modular system, it can be expanded in accordance with needs.

It includes individual tables or one long table, with ergonomic chairs (rotating and height adjustable), footrests and waste collection at each work station.

Constructed with Cardan conveyors in closed circuits without return, producing an open, easy-to-clean system.

It can optionally include an individual production control system for controlling:

  • Performance
  • Generated waste

Fish Block Maker®

Designed to form fish blocks with subsequent bagging in a semi-automatic fashion with high production.

The fish is positioned on conveyors by a transfer system, designed and patented by Hermasa, it fills moulds that have been previously inserted in plastic bags, which then pass through vacuum, sealing and freezing.

It is versatile because it can be adapted to different block types.

Considerable labour reduction, increased production, accurate weights and better end-product quality, with practically no crumb production.

Generation of uniform blocks, which favours freezing, better packing, greater load capacity per container (depending on administrative limitations) and a more uniform defrosting process.

Automatic tuna packing machine Tunipack®

Designed for automatic tuna packing.

The maximum machine speeds may range from 300 cans per minute for the TUNIPACK® 300 up to 500 cans per minute for the TUNIPACK® 500. The range is completed with the TUNIPACK®-GE for large formats, thus covering all possibilities.

Continuous oiler

Designed to add oil or sauces, by curtain or overflow, to the containers before they are closed.

Constructed with one or more dispensing units depending on required production and format.

The surplus oil or sauce is filtered prior to returning to the accumulation tank from which it is pumped back to the dispensing units.

When dispensing sauces, a stirrer is installed in the accumulation tank, which maintains the sauce mixture.

Can washing with oil recovery

Designed to wash cans with pressurised water from the machine tank. Its design enables the water-oil emulsion to be continually recovered. Subsequently, the oil can be recovered by separating it from the water with a centrifuge pump.

Washing is performed with hot pressurised water and with the can positioned laterally to achieve greater free washing surface.

It is designed in different sizes, depending on required production speed and format.

Palletizer for autoclave baskets

Designed for palletising the cans in the autoclave carriages for subsequent sterilisation.

Depending on the required degree of automation, the operating speed and format, the palletiser/basket loader may be:

  • Automatic: The operation is completely executed by the machine, with automatic positioning of plastic spacers and automatic carriage entry and exit.
  • Semi-automatic: The machine automatically forms the layers of cans and transfers them to the carriage. Manual positioning of plastic spacers and manual carriage feed and removal.
  • Manual: The operation is completely executed by an operator using electric controls.

Autoclave

Designed to sterilise all types of conserved foods in sealed cans, with temperature and pressure control.

Steam sterilisation with water spray heads with over-pressure..

Machine constructed according to CE and FDA standards.

Available in various diameters (1,500 mm or 1,380 mm) and different capacities to satisfy the demands of any production.

Equipped with automatic controller/programmer with capacity for various sterilisation programmes and F0 temperature sensor.

A heat exchanger may be fitted to convert the autoclave into a highly efficient unit from the energy point of view:

  • cooling water savings
  • savings on boiler water and fuel required to generate the steam

The heat exchanger makes it possible to reuse the cooling water in successive cycles (with a cooling tower or similar system) and the recovery of condensates that are returned to the boiler water tank.

It is heat insulated to prevent energy losses and has all the safety systems required for equipment of these specifications.

Autoclave carriage de-palletiser/basket unloader

Designed to de-palletise the autoclave carriage cans after sterilisation.

Depending on the required degree of automation, the operating speed and format, the de-palletiser/basket unloader may be:

  • Automatic: The operation is completely executed by the machine, with automatic removal of plastic spacers and automatic carriage entry and exit.
  • Semi-automatic: The machine automatically removes the layers of cans from the carriage and transfers them to the exit conveyor/buffer. Manual removal of plastic spacers and manual carriage feed and removal.
  • Manual: The operation is completely executed by an operator using electric controls.

Washer-drier machine for cans

Designed to wash and dry the cans after sterilisation.

Washing is performed with hot pressurised water and with the can positioned laterally to achieve greater free washing surface.

Drying is also performed with can laterally positioned and with our own design of blower blades, first connected to a compressor then to a high-capacity blower.

De-palletiser for empty can feed

Designed to de-palletise cans from the empty can pallets and then feed them to the packing machines.

Depending on the required degree of automation, the operating speed and work format, the empty can de-palletiser may be:

  • Automatic: The operation is completely executed by the machine, with automatic removal of plastic spacers, automatic pallet entry and exit and storage of empty pallets.
  • Semi-automatic: The machine automatically removes the layers of cans from the pallet and transfers them to the exit conveyor/buffer. Manual removal of spacers and feed and manual removal of full and empty pallets.
  • Manual: The operation is completely executed by an operator using electric controls.
